What I’m going to share with you is going to change the way you think about brunch forever. It’s a play on the all too common bacon and eggs that we all love to eat. In this version the eggs are “deviled” and the bacon is made into “jam”. Mesh them all together and it’s a spin on the flavors that make us all do a happy dance.
So, where can you serve these non-breakfast breakfast flavored appetizers? The sky’s the limit. Brunch will never be the same. What about special occasion dinners? Or part of your snack plan for game days.
The one thing I will let you know before you begin the journey of creating this recipe is that you’ll want to first check out our recipe for bacon jam. It can be made ahead of time and then it’s incorporated into these little morsels. So, plan ahead to make these bites.

As far as I can tell it’s a term that was created for platters that aren’t really a charcuterie platter, and not just a cheese platter. It’s more than just a platter. It’s got small bites of food added in with the platter to really create a heartier snack, depending on what you create it could even be in lieu of a full meal.
I love creating snack platters. I think it’s because I’m not really cooking, yet I get to be creative with food – and turn it into a little work of art. That work of art usually gets devoured pretty quickly in my house, and that’s okay.
Snack platters are perfect to have around for when you are watching a big game, having a family movie night, expecting a friend over for coffee or cocktails, or if you know dinner is going to be running late.
You can create snack platters with a huge variety of ingredients depending on the occasion, however, I love to always have some specialty cheeses
Bacon is one of my top favorite foods of all time. A few years ago I had one of my dearest friends (who happens to be vegan) change my life forever because she made me a gift basket filled with pickled and canned creations that she had made. One of the jars contained bacon jam. It’s like bacon candy people, and if you love bacon, you’re going to want to try this recipe out soon.
That jar of bacon jam quickly disappeared and I soon found myself on a quest to make a batch of my very own jam. After tweaking the recipe a couple of times over the years, I’ve found my favorite way to create it. And, of course, I want to share it with you.
Sometimes, the simplest of appetizers turn out the tastiest like these prosciutto-wrapped cantaloupe bites.
I love quick and easy appetizers. I always like to keep a few ingredients on hand that can easily be whipped up and presented to last-minute guests. It could be some cheese and crackers with stuffed olives or some fruit wrapped with prosciutto. You’ll generally find all of these things in my refridgerator and pantry. This cantaloupe wrapped prosciutto bites are the perfect bite to serve, and takes literally minutes to make!
Since it’s such a simple appetizer I like to serve them on a unique serving dish. The one in the photos is a vintage platter from Italy that I happened to find at a second-hand store for only a couple of dollars! It’s one of my favorites.
Oregano feta dip. Sounds a bit interesting, right? Well, it is. It gives a unique combination of flavors to the spread, making it a hit among the crowd.
Once upon I time, I decided to try something different. Ha! Who am I kidding, Bites & Platters was created because I have a love for all things slightly different. So, oregano is a herb that unless I’m making pasta sauce, I just don’t use that often.
I felt bad for it always sitting up there in my shelve, so back in 2017 I decided to venture away from the spaghetti sauce and use it in a dip. I combined the oregano along with sour cream, garlic, feta cheese, green onions, lemon juice, and parsley and surprised myself at how tasty it was!
Red Onion Jam sounds a bit weird, but trust me, it’s far from that. It’s sweet, it’s a little savory, and it goes oh-so-well with some cream cheese and crackers. It’s the perfect addition to any brunch or party platter.
The first time I ever made red onion jam was a couple of years ago. It was for a family brunch I created to nosh on during that big solar eclipse. Like I mentioned a few days ago, we were in the direct path of totality and it turned out to be pretty darn awesome. My husband, kids, and I trekked up to one of the vineyards that my husband worked at and had a brunch picnic together. Then, we experienced the eclipse, which was a once in a lifetime event.

As you’ll soon find out, I love herbs. Especially rosemary, so you’ll find a lot of recipes that incorporate it in as an ingredient at Bites & Platters. Rosemary is something that I personally have year-round, thanks to a large barrel that I have in growing in beside my house. It’s seriously the easiest thing to grow and grow it does!
But enough about rosemary for now. What about this delicious shortbread recipe?! Confession: I never thought I liked shortbread. However, after making it myself though I realized that I just didn’t like store-bought shortbread! Baking it from scratch makes a huge difference in the flavor and texture of it. What I didn’t love about store-bought shortbread was how dry it always seemed – I felt like I was eating cardboard!
Confession: my kids ate the entire platter of these honey lime stuffed olives in less than 10 minutes. Ya, they are that good.
Black olives are an item that never stays in our kitchen pantry for long. I grew up loving olives, and my kids, while not as adventuresome on the variety of olives they like, will inhale a can of black olives almost as fast as you can open them.
Who else remembers sticking the olives on your fingers and making funny claw-like moves? I know I certainly did when I was a kid. While that’s all fun and stuff, I thought that perhaps I’d change our ordinary olive binges up a notch and attempt to classy them up.
